Hi - if I have a work mobile number and an iPhone and someone else gets takes over my my work number (not the phone itself or the sim - the number gets transferred) then can they see my texts? Or are they saved on the phone itself

The texts are stored in your phone or in your sim. Taking over your number only will not give them access to your texts. But if you are still worried, you can easily delete them before the number transfer.

However anyone sending further texts thinking they'll get to you will find they go to them as they has that number now.
