Is there anyway of keeping them tasty once gone cold?

I'm cooking a big pot of soup for a homeless charity and they've asked me if I could do roast potatoes. Not a problem but how do I keep them tasty?

Cook them in lard and sprinkle with salt when they've cooled
I concur cook in good quality fat till crispy, drain well maybe even dab on kitchen roll then sprinkle with salt when cool
I'd have gone with the kitchen roll thing too RR. However I read last week to drain on a rack rather than kitchen roll. Tried it Sunday and it works.
Good idea BM I would have dabbed and then cooling rack but straight into the cooling rack save a stage
