My lovely wife bought a gammon joint, boiled it up with onions and carrots and lentils, and shredded most of the meat, to make gorgeous soup.
Not had that in a very long time, but it was two bowls good, and with the snow outside, and soup inside, the world is a better place tonight.

Lamb neck chops make a great stew when done with barley and veg.
Is shin beef the same as what my mother used to call haugh/stewing steak?
Yes.
Hard to find shin now with the bone in, that was the tastiest for flavoursome stock.
It probably depends on which part of the UK you come from. Stewing steak wasn't shin to us.

Stewing steak doesn't really indicate a particular cut.
Theland, brisket used to be a very economical beef buy. Unfortunately it has really rocketed in price, more's the pity. My favourite recipe is this one:

Btw, "well marbled" does not mean fatty. Quite delicious.
