The aircon is powered by a compressor which is in turn driven by a belt from the crankshaft, when you switch the aircon on a magnetic clutch connects the constantly turning pully on the compressor to the compressor itself this causes drag on the engine which may show itself in a slight lurch. There is usually a circuit to increase revs very slightly when the aircon is switched on to prevent this, either your pug doesn't have this or it isn't working quite as it should.
It will probably be like Fitzer says the magnetic clutch is either rubbing or has seized slightly causing the engine to jerk. The revs are raised slightly to accomodate the drag of the magnetic clutch and the compressor running.
my escort does that it is because it has to use 5hp from the engine to cool the car down the only way to stop it is to turn it OFF
