If I left all my money to charity would inheritance tax have to be paid?

No (provided they are registered charities).
And if you are a widow your husband's IHT allowance should have been transferred to you, thereby gving an allowance of £650000. I think even higher allowances apply if there is a property involved- I recall some sop to the south east property owners in one of George Osborne's budgets. Anyway, that's immaterial here for the reason NJ gives- i only mention it as many of those who worry about IHT will never be affeced by it
If you leave your home to your children (including adopted, foster or stepchildren) or grandchildren, your tax-free threshold will increase by £100,000 to £425,000.
