The Robert Welch website recommends a ceramic wheel hand-held sharpener for its own Signature Santoku Knife.

Puzzled by that. Are those sharpeners on a par with steels?
As I already pointed out yesterday, ceramic sharpeners are better at keeping a good edge on steel knives than metal sharpeners. I have a ceramic "steel" ie it's just like a metal steel but made of ceramic.
....like this, but at a fraction of the price (from Ikea!)
