Rocky - they need to be quite thick steaks - drop of oil in a non stick pan - get it very hot - sear both sides of the steaks for a few seconds to seal them.
Turn the heat right down (almost off), splash in a good dollop of dry sherry and put a lid on - allow to cook very gently for about 20 mins - turn occasionally.
At the end, turn the heat up to boil off the liquid and chuck a couple of pineapple rings in the pan too.
I cheated and used a sachet of Aldi pepperorn sauce - nuked in microwave in a gravy boat for serving.
Ham chips and peas for the present Mrs Hughes, fried plaice and peas for me - both prepared by myself, as is only right and proper, and a tube of Smarties each with a cup of tea for afters.
