I am going to make a sponge cake maybe on Friday - how can I keep it fresh until Sunday. Don't have a tin per se. Thanks

I use my microwave as a bread bin
It’s a sealed unit
Ops where did that go

It also save space
Yep Microwave if you're not going to use it or a pressure cooker if you have one if it'll fit :)

I had been thinking of cling film or tin foil -

it'll be small - would a tight lid fitting sauce pan suffice
Put it on a dinner plate and cover with Cling Film; wrapping the film onto the underside of the plate. The sponge will certainly keep fresh for the two days you have indicated.

Whatever you do,avoid putting it in the Fridge because it will dry out. Best to store it in a cool cupboard if possible.

G'afternoon jenny.....Both myself and wife are ok. Hope you are likewise.

I look into AB every day but have become very selective in the threads I become involved and only respond to folk such as you who I consider are nice ABers.

Anyway I am digressing somewhat from your original question and would like to comment further on the subject matter.

The Microwave idea is a good one and so is the pressure cooker suggestion. Also you could put the sponge on a plate and possibly place it on a kitchen work surface with the bowl, in which you made the sponge mixture, upturned on top of the cooked item.

The main thing is that you avoid the Fridge which will have a drying effect on the cake. It may appear strange, but if you wrapped the Sponge and put it in the Freezer it would last for a period of about two months. ; but would need quite a number of hours to defrost.

Who uses tins these days?

Any big supermarket or (probably far cheaper) a discount store can sell you a suitable plastic container for your cake.

Oh okay - it generally works better if all your ingredients are at room temperature to begin with.
