Just watching his Road to Mexico trip. He has just referred to Carneconchilli.
Never heard Chilliconcarne referred to like that before!

I watched a bit of one of his recent programmes but he seems to have aged terribly or maybe he's been really ill, he was like a shadow of his former self. (Know that's not what you asked.)
It actually makes more sense to me to say 'meat with chilli', rather than 'chilli with meat', especially where you're using cubed meat:

Having watched more of the programme he has just explained about the difference. It's because it's Mexican and other reasons about cubed meat and beans in or out of the dish. Can't remember what he said exactly!
The 'standard' version of chilli con carne always seems to include kidney beans but my own quick version leaves them out (and tastes just as good - if not better!)
I make my version with tinned baked beans. I thought he looked good for his age swimming in the cenote but if you are only up to the carne con chilli episode you may not have seen that one yet.

Oh, that's the really easy one!

Half a can of baked beans, half a can of supermarket 'value' minced beef in onions and a generous amount of hot chilli powder, all stirred together. Forget the rice, just serve it with some nice, fresh bread. Lovely!

I've recorded every episode but there hasn't been a single dish I have been taken with.

When I went to Mexico circa 2001 the food was quite varied but terribly bland in my opinion.

I preferred his India series and received the relevant cookbook at Christmas.
