If I know I am going to be short of time could I make a cake mixture today and keep in the fridge until tomorrow?

You certainly can, covered.
If you are using baking powder or self raising flour you are likely to find it doesn't rise too well as the active ingredients will hav exhausted themselves as once moisture is added.
Just checked that out, Google agrees with Eccles. Never had a problem with saving cake mixture myself though!

Google agrees with me???? Always thought it was useless ;-)
I always find that once mixed, cake batter should be turned into the tin and cooked immediately.

My wife agrees with NoMercy, and she says that, if you bake the cake now, you can put the cake into the freezer when it has cooled.
