On my Samsung J5 2016 mobile. Last time I updated I had lots of problems with background data using up my allowance. All back to normal now though since Phone shop sorted out problem... However I am now being reminded to do another update which I dont want to do. Can I stop this popup from appearing and if I do will the phone update automatically or will the update just not happen? And does it matter if I dont update??

You can keep refusing it but it'll brow beat you into it in the end. Sadly though if you do not update then other things that rely on those changes will also stop working. I know it's a ball ache but really you'll have to do it in the end.
Unsure. I know you can except individual drivers from MS's update nagging on a PC; but no idea about mobiles. Suspect that there must be a way if you dig deep enough into the OS.
Just make sure you do it when connected to wi fi.

Some of these updates will be security issues so you should install them.
