After reading some reviews we think there is only one or 2 sockets in our hotel room. We have lots of adapters but are unsure if an extension lead (uk) can be plugged in and used safely?

That would depend on what devices you were using.
The supply is 230v and 50 hertz so if you do not overload your extension then there should be no problem.
donny48 is correct. A UK extension/multi-connector ("stick") can be used just as safely as an equivalent Schuko/euro one. If the UK one is fitted with a UK plug rather than one matching the wall socket then using an adaptor on the plug is going to be less than ideal but provided you are drawing less than, say, 7-9 amperes in total (i.e. less than 2kW) then it should be safe, but the plug adaptor will likely be the weakest link as these are often incapable of handling more than quite modest loads. My advice would be never to leave anything plugged in unattended.

It would be a radio and phone chargers
Radio and phone chargers will be ok.
Always take a 2-gang extension lead when travelling. I managed to get a European type (which fits sockets in Greece, Spain, Holland among others) but have previously used a UK one with an adaptor. The main reason is that sockets in apartments and villas tend to be behind wardrobes or on the skirting behind a dressing table. Using the gang plug means I only have to shift the furniture once.

Thanks everyone thats very helpful x
I bought a universal charger from Amazon last year, it has 4 charging outlets and the plug but can be changed for anywhere in the world, saves using too many sockets for phones, kindles etc.
Check where the fuse box is.electricity in Greece has a habit of tripping out.
