How long can you use leftover turkey once the big day is over? The NHS site says 48 hours, yet I remember as a kid I seemed to be eating turkey for ages after christmas day!

As wasting food is totally immoral, I think the NHS "advice" is irresponsible. Who finishes a turkey within 48 hours of cooking - we certainly never did. Turkey will be fine in the fridge for up to a week.

The leftovers seemed to do us for about a week after Christmas.
As long as it is kept properly either wrapped in clinky film or an airtight container and in the fridge I see no reason for 3 or 4 days after it is cooked we certainly that long
I take everything off the bone on boxing day and keep it in a tupperware for up to 4 days. I make a stock from the carcass. Turkey freezes really well so you can freeze enough to make a curry later.
...also freezes very well, sliced and in gravy. Just right for Easter!

personally what is left is given to a local dog as I can't face any more after Minty Day....
