Can I Freeze Muffins

Hi. Just made A big batch of courgette and cheese muffins but its made loads and would like to freeze if possible. Would they be ok? They have 1 egg, flour,oats and oil in them.

Yes you can - I make cheese muffins and banana muffins and have frozen both. Just defrost them when you want them.
The only bit I have any doubt about is the 'courgette' component. Courgettes don't freeze well, perhaps they would do if chopped very small?
Normally muffins freeze brilliantly.
Agree with jordain. You could be lucky but ,like cucumber with high water content, courgettes could go mushy when defrosted methinks.

I've never baked with courgettes,but I'd assume that the moisture is pressed/squeezed out of them before adding to the batter.
