Authentic spanish towns near the beach.....

we want to go to mainland spain this year and rent a villa, we are after ideas on where we can head that is within 10-15 mins of the beach, but based around an inland town (anyone know of Pollenca in Majorca that sort of place versus staying in the port/beach area). We like an old town feel with church/square where you can go out to eat at night, winding cobbled streets and where the spanish go. People have suggested Javea as that has an Old Town, Port & Beach Area - over to you, where have you been that fits the bill???? TIA
