Weekend Break desitnations..I need hotel recommendations

I would really like to go away for the weekend at Easter, (yeah me and the rest of the UK), can anyone recommend good hotels etc in good locations. PS. I prefer rural locations, Wales, South Coast etc NOT London, Bristol .......

Tresanton's very nice, if a bit pricey. It's in St Mawes, Cornwall, and overlooks the sea. Great restaurant, nice cosy bar, friendly staff, top location, great service. Handy for Land's End, the Eden project and the Minack cliffside theatre. Their website's here - http://www.tresanton.com/
If you prefer the Welsh coast my friends stayed at Portmeirion recently and said it was charming. Their website is here - http://www.portmeirion-village.com/
Just remembered the other hotel I've stayed at in Cornwall which was GREAT (and heaps cheaper than Tresanton) and that was The Old Coastguard Hotel in Mousehole, quite close to Penzance. Their website is http://www.oldcoastguardhotel.co.uk/ - really friendly staff, great views, rooms and a gorgeous little unspoilt Cornish fishing village to explore. Well worth a looksee!

Dave Potts: I Luurve St Mawes, my BF and I went there last August with my Mum, who died in January, so it could be the perfect place, (thus the reason we are going away by the way)...thanks everyone for all your suggestions!
