I know I’m being thick, but the two statements seem to contradict each other. The hotel is in the public area, but I don’t need to go through customs. It can’t be both??

“Yotel is located in the public area (not the secure transit area) of the International Arrivals section in the South Terminal of London Gatwick Airport.

Guests starting their journey from London Gatwick Airport do not need to go through UK customs or be checked-in with the airline. “

Simply imagine that you're meeting someone off an international flight. Where you'll wait for them is the 'public area of the International Arrivals section' and that's where the entrance to Yotel is located.

Never heard of it but that says to me that it's landside in Arrivals
Looking at their website, it is in the terminal building before you go through security/customs checks.
The operative statement is "Guests starting their journey from Gatwick....", meaning you arrive from within the UK at Gatwick South Terminal and enter the hotel. That means before any of the flight related processes - landside (arrivals area).
