My 32GB iPhone is full, and I have to keep on unticking albums, erasing podcasts, apps... etc.

128Gb SSD has been available for a while now. They can easily release another model with 128Gb built in but they just holding technology back purely for profit. I guess you'll have to wait until a couple more years.
