My touchscreen has become very unresponsive @ times, I've tried switching the tablet off (sometimes i'm not able to do this because the screen freezes)
& back on .... occasionally this works. Can anyone help please.

i have the same problem with an acer but it does not actually freeze, i find cleaning the screen with a product like tesco's lens cleaning wipes sorts it out,any slight grease from fingers etc make my screen unresponsive
You can try contacting Google to see if they'll give you access to the operating system for reload. I had issues with my Pixel C but a reload didn't help. Is the Nexus 7 a sealed tablet ? If so you have a problem. I didn't find anyone capable of opening the seal and checking inside for connection issues.
The Nexus 7 is a cheap, low powered tablet at least 6 years old. I had one and loved it but it did not age well.
I would recommend you buy a new tablet but if you really don't want to try restoring it to factory settings. This will clear out the years of rubbish it has accumulated and hopefully make it more responsive.
Please be aware that doing this will delete all your photos, music, videos and files so make sure you have everything backed up before you start.
This is something I do every year or two on all my devices. It is time consuming but I find it very worthwhile.
After you have reset it the machine will be exactly as it was when you bought it, so you will have to spend time setting it up again.

I too had a Nexus 7...in fact, 2 of them. Great when it worked, but started having issues about 3 years ago. I got a Samsung, but used the Nexus as backup when the biggie was charging. Sometimes it behaved very well. It just about died completely a few months ago...so I bought a cheap Fire. Not as good as the Nexus but ok as a second tablet.
