I’m just checking today’s emails and I’ve just noticed that they are all addressed to not me, but to a customer that I sent a parcel to this morning. Completely baffled I scroll down my inbox and see that every email I’ve ever been sent says the same. It’s my email address that they’ve come into, and they are all for me, but my name has been changed.
So I go into a spare email address I have and send one to myself and sure enough - again it comes in saying to ‘ Joe Bloggs’ and not me.

So I’m racking my brains as to what In gods name has happened and the only thing I can think of is this - when I went into the DPD app to send the parcel it asked for customers name, address, mobile and email. Well they don’t have an email and it wouldn’t let me send it without one so I put mine, thinking well it’s only for tracking anyway.
But how on earth has that altered every email in my inbox??
I can’t not send any emails as they will say they come from my customers name!

It's not the email address that's wrong, you've merely accidentally changed the account name. The account name is completely independent of the other settings and is just a way for you to identify the account (eg, you could call one account "work" and another "personal". You just need to go to the account details and change the name again.

No I know the email address isn’t wrong but can’t see how it’s changed the name?
How are you sending and receiving your emails? Through a dedicated email client on your computer (Outlook? Windows Live Mail? Thunderbird?), with an app on your phone, by going to your email provider's website (Gmail? Outlook? Yahoo? GMX?) or in some other way?
If it's in your address book for your e-mail can you check and edit things there ?

No, no idea how it got like that.
Unless you tell us how you access your emails, how do you expect anyone to give specific instructions on how to correct it?
Using Thunderbird as an example (and you should be able to extrapolate for other accounts):
Right-click the account name
Choose settings
Change the account name which is the very first field on the settings screen
click OK
