Galaxy Tab 2 7.0 Clearance Problems

My wife and I share a Galaxy tablet and we have several problems.
The first is with E-mails . Unlike using a laptop we don't seem to be able to sign out of Yahoo or G mail . When we open up the tablet all the e mails are on show. We would like to close and open after each use.
The second problem is photo store This contains one very unflattering "mugshot" of me taken by accident on the first day of purchase as I was trying things out.
I would really welcome any suggestion that anyone can give me please
