Can you edit a listing to include a Buy it Now price to enable a buyer to buy item after offering an amount via email , even though there have been some bids on item.

I would say if you have been offered an amount for your item if you end it now, it is because the person who contacted you is expecting it to sell for a lot more and wants a bargain.
