Following an upgrade, Norton comes up as my search engine but I want Google back. How, please?

Go into your browser settings.
it'll depend what browser you're using but have a look at these

I'm using W10 and Firefox. I've tried the link and although I can get to a screen which lists search engines and I've ticked Google and unticked Norton, there is no facility to 'Apply'. So nothing changes.

Clicking OK is the same as Apply.
But, as well as unticking Norton, and ticking Google, you need to select Google as the default search engine. Above the list of engines, you should see a drop-down that says "Choose your default search engine..."
You need to click the drop-down and select Google
