Can anyone tell me why, in the diving, some of the scores are crossed out?

As the judges are from the various competing nations its to ensure they are not being biased towards their own competitor or unduly harsh against a competitor who is leading. It also ensures the average score is more representative.

Because that's how it's done !!!

Seven judges score the dive. The highest and lowest are discarded and the remaining five are added together and the total multiplied by the "degree of difficulty".

Yes, seems a very good system to me- it ensures that the overall score isn't distorted by an individual score that may be out of line with others either because of an error, bias, poor judgement or whatever
