how does the non stick bit if a non stick pan stick to the pan if it's non stick

It is the coating that becomes non-stick when it is dry after application. But then..... I suspect you knew that.

I'm off to order a Jesus pan.
The non-stick coating is joined mechanically to the pan rather than chemically (as it wouldn't stick).

The surface of the metal has thousands of tiny holes shaped like upside down mushrooms. The non-stick coating fills up these shapes then forms a very thin layer on the pan.

Sorry, not a very clear description but I can't find a diagram at the moment.
