I buy a couple granary loaves from my baker on a Monday and it's still edible by Friday ..a bit stale but perfectly alright for toast and not a sign of mould. It could be to do with where you keep your bread .I keep mine in an old enamel bread crock which must be well over fifty years old and belonged to my late mother.Never had...

I agree - bread can be several days old and still soft. Then all of a sudden - it's green!
Stale = dried out. Mouldy = moisture present.
It's all the preservatives that go into shop bought bread that keep the bread soft. it's not natural for a natural dough to keep soft for days.
