2) Shylock??
could the answer to 3 be farrier?
q1 The assize of bread and ale was established in 1266.
and I think was one of the mayor's duties in some towns but other historical accounts mention a ballif or market clerk.

q3. The maker of the metal parts of a horse's harness was called a lorimer. A spurrier made spurs.

q2. An irish moneylender was called a gombeen man

Thanks valerieb for no. 5. Don't think it's farrier as he makes horseshoes. Shylock is a Jewish moneylender, I don't know if it's slang or an irish word.
