Clue - From one to the other, perhaps (11)

E - T - E - E - I - S

I want to put 'extremes' or something in but can't find ANY word meaning anything to fit.

Each letter comes from a word that has at least 2 other words 'crossing' it. If you want to help and want these clues and my answers as well I can offer. Many thanks.

The i comes from -

Complaining about a good drink going well with Belgian fish (9)

I have put grumbling (g + rum + b + ling)

And I use the G, U, B and G in other words.

Teas a Scot brewed in part of Britain (4, 5)

It is - - S - C - A - T

and I've put in East Coast

EXTREMETIES...so I guess you were right all along . :-))
