I am entering a baking competition for scones and I can never get them to be of equal size/rise etc. I use the same cutter but they always look different. I have to enter x3 that look the same !!!
Any clues

Are you rubbing the fat into the flour by hand? Do so until the combination is uniformly 'grainy' and then add the milk and mix in with a knife. Make the dough into a ball, pat it out to the right thickness and cut. The results, for me, have always been very even.
Also, make 24, pick the best and most even 3 and freeze the rest!
