Just poach it gently and eat as it is. Nice with new potatoes and garden peas.
Poached in milk, or part of a kedgeree
A very versatile ingredient, lots of choices here.

I've got some in the freezer to make a chowder...either with sweet corn or Scottish Cullen Skink.
Goes well in kedgeree.
goes nice with new pots and veg.
Kedgeree is the way to go, simple recipe, I'm just making one as I speak, BBC recipe is very good a simple to follow.
I fancy a piece of smoked haddock now. Add to the shopping list.
My mum used to just lightly cook it somehow, and we’d have it with hovis bread and butter, I loved it.
The only way Ive had it since then is as part of a fish pie, which is also very nice.
My Mum used to poach it and then serve it with a poached egg on top. Delicious. Haven't had this for many years.
Poached smoked haddock on a bed of wilted spinach with a poached egg on top is heavenly and so easy.
