Help Needed With Ev

I have which I believe is the correct answer to 38 across which is but it does not fit in with 34 down which is aged, are my answers correct or am I missing something? also the preamble confuses, 1-do I write the answer in? or 2- Do I select a letter to take out and if so how do I choose?

Mess and Aged are both correct answers, but one letter from each is put to the side, bottom, whatever. The selection of letter works by fitting it in with other answers!

38 Mess, medley. It's from Mesquites, leguminous trees, with the 'quite' removed.

34 Aged, old. Degas was the artist, drop the S, saint, for Dega. It's reversed/upwards, in the ascendant, so Aged.
