After reading the excellently answered Brit vs US spelling perhaps someone will know the answer to this: Why, if the American spelling of 'tonight' is always 'tonite' does 'The Tonight show with Jay Leno' use the British way of spelling?

Because it's the US way of spelling it too. Tonite is just a shortcut, the dictionary says it's 'tonight'.
Tonite is not the proper way of spelling tonight in American. It's just a spelling made up by the advertising world; even here in Britain I've seen posters for "nite clubs", etc.
