Ham on the bone v. tinned ham.

Because of the stuff that is put into tins of ham, we buy ham on the bone. Does anyone know whether nitrites are used in the ham on the bone cooking process?

If you actually see the "Ham on the bone" you're buying being carved off the bone, then it's nitrite-free. If it's pre-packed but described as "Ham on the bone" expect the worst.

Many thanks for your advice. It is, in fact, on the bone. The tinned stuff doesn't compare, either in taste or texture. I just wasn't sure about the curing process, as I have read that nitrites can be detrimental to health.
