1) I take it I should remove the astroturf currently down? I cannot just turf over it? I’m disabled with heavy fatigue, so any energy saving opportunities available are greatly received!

2) Am I right in thinking I can astro over the gravel as long as I throw some sand on it to level it? Do I need the sand?

3) What should I use to cut astroturf?

Here is my shopping list:
• Artificial grass 32m squared
• Weed membrane/matting (doubled over) 64m squared
• Underlay (single layer) 32m squared
• Joining tape
• Turf pins (5 per meter squared)
• Border (????)
• Sand

4) Do I need all of this? Such as the sand? Or underlay and weed membrane together?

5) Should I add anything extra to the list?

6) What could I use as a border along the fence that’s simple to fit and doesn’t need cutting? Bricks?

Crikey, I’m needy, eh!

personally i would get someone in to do it :) It can look awful if not laid correctly
Possibly useful. (As it seems that you've already got a base that's at least partly suitable, you might be able to skip the first bits):
