Watched Jamie and Jimmy tonight - think they were doing a version of Jerk Chicken. I'd like to try it - is it nice or is it very hot.

Have googled his recipe - looks easy.

Whenever I've had it it has been very very hot but I guess you can vary the amount added.

Don't know about their particular recipe but it's as hot as you want to make it. Perhaps go light on the spices first attempt and maybe bolder next time you try.

thanks for that - as a while back I added tobasco (sp) sauce to chicken - ohh - threw it out - too hot.
I make mine hot by using a scotch bonnet pepper. Just the one mind you as they're hot.
Start mildish and work up to burning. Friends of ours went to live in Mexico and went regularly to a local restaurant. After they been a few time and got chatting to the owner he told them that they gave new, pale customers mildish food and as they tanned they upped the heat!
JJ, as you don't care too much for heat swap out the scotch bonnet for a less fierce chilli and reduce the amount of hot pepper sauce.
