With all these crashes (far far more injuries/deaths than from stabbings) and no police deterrent, how do we protect ourselves ?
I’m getting an armoured vehicle.

No need for an armoured car . Just be certain you ALWAYS wear a correctly adjusted seat belt . (a badly adjusted belt or loose belt can be worse than no belt at all !)
Road crashes have ALWAYS caused FAR , FAR more deaths and injuries than crime ! It is just not 'newsworthy' so gets little attention in the papers/TV news !
When I was learning to drive, my instructor said, “Always consider every other driver on the road to be an idiot and never trust any of them to do the right thing. That way you will always be prepared for stupidity”. It’s stood me in good stead.

yes similar thing said by my instructor always stuck in my mind, can remember incident on a lesson when somebody opened car door 10 yards in front of me, tested my breaking skills. on day of my test it was icy so emergency stop required some tandom breaking, only comment from tester was "do it a bit quicker next time" passed me though
But maybe soon we'll all be safe in self driving cars.
Then the speed limits can be removed.

So if you are really worried about risk factors, I would try to lead a healthy lifestyle, give up smoking, don't drink too much, eat a balanced diet and get plenty of exercise. Oh and live in the country, not a (heavily polluted) city or large town.
Tony, when I was taking my test someone stepped out right in front of me from behind a parked car - and I was very grateful to him. I passed!!

My instructor said the same, and added - "assume that there's an immovable object just beyond your line of sight - one day there will be!"
OH, self driving cars won't happen.

However it won't belong before cars won't physically be allowed to exceed speed limits.
Anticipation is key to safer driving.
