im thinking of a small food delivery van. here are my thoughts on some easy enough food to sell. please feel free to add and give me some tips and tricks to help me out.

chilli con carne in a tortilla wrap with salad)
chilli con carne over baked potoato or chips with cheese.
chilli con carne in a baguette with cheese.
thick spicy bolognese over chips in a baguette, over baked potoato with cheese.
dutch style chips in a cone with raw onions and lots of mayo on top ( yummy)

please add...recipe needs to be easy to make, simple and cheap to source.

what about a stew with a difference ?

or name some baguettes with a difference like a baguette with jalfrzi chicken filling, breakfast baguettes ? just something different that stands out from the norm which will be more mouth watering and appealing instead of the usual ham n cheese roll with a tin of coke and a packet of crisps.
where are you planning to sell your goods, diesel? Your menu sounds good but very messy. If i was on the go and only had time to stop at a fast food van, i'd be looking to grab something quick to eat.

How about homemade burgers (plain, onion, spicy?)
Hot dogs
Bacon/sausage roll
BLT sandwiches (homemade bread)

Norwich has a market where there are many food sellers. The pork stand is always busy. Steak in a baguette is always popular. I think street food is quite trendy in big cities such as Asian cooking. Good luck!
Consider where you will be selling it.

selling around industrial estates . office blocks .....i think its difficult to get a licence for a food van on a site for belfast my home city.
I know one thing goes a long way and that is home made vegetable soup - and if you don't sell it out - you can freeze - no matter where I go that's my favourite. Also don't freek out cutting vetables - you can get them cut alredy in the vegs especially Sainsburys and if you want them smaller put them into blended and plus them. Let me know if they sell well particularly coming up to winter everybody loves a drop of soup - me me memememmeme
Noticed people in Norwich eating chilli con carne out of plastic tubs.
Do you mean 'delivery' as stated in your Op - food in sealed containers or sold from a static van to passers by?
Satay
Last couple of years we have gone to a firework display at local school. The burger van only had a small hot plate so we had to wait for about 45 minutes!!
Before you do anything you should check whether you need a licence, food hygiene certificate etc etc.
Idea though how practical I don't know but I have never seen an old bus refitted to be a cafe. Probably because it wouldn't work!!!
I would love it if there was someone who delivered McDonalds - not sure how it would work though.
Why not keep it simple with ham or beef burgers with different seasonings.
I googled bus converted to a cafe and they exist! See I'm not as stupid as I look.
bolognese and chips sandwich - yum!
You personally must have a food hygiene certificate and the place where you prepare the food has to be registered with the local council's environmental health dept. It can not be used until the inspection has been passed.

You have to have all this in place before you start.
^^ Your premises which includes the van, have to be registered with the environmental health dept of your local council at least 28 days before the date you want to start the business so you need to get that sorted before you worry about menus !!
