I accompanied my daughter-in-law to the dentist this morning and was in the waiting room watching tv while she was in the surgery. Phil Vickery was talking about not putting eggs in the fridge and why it was wrong to take them from the fridge and add them straight into the cake mixture. In the middle of this, my d-i-l came out and I missed what he was saying about eggs.

Can anyone let me know please?

Pop them into hot (tap) water fo five minutes befoe adding to mixture to prevent curdling

Thank you both for your answers. I thought about watching on catch up but didn't feel like sitting through the whole programme but then realized I could go forward until i got to the baking section. Those lemon meringue cupcakes looked delicious!
I was always told not to keep eggs in the fridge as they can absorb other smells, such a smelly cheese. Don't know how true that is but I do know that very cold egg whites won't whisk up for a meringue.
Thinking about it, we buy eggs from a shop/supermarket etc and they are not in a fridge or chiller.
We get them home and immediately put them in the fridge because it has a place for them, not necessary??
As said they are not in a chiller cabinet in the supermarket so why put them in the fridge. Also the shells are prone to break when making boiled egg.
