Can I demand from the Council photographic proof the I overstayed my time limit. I don't trust these wardens as they are paid for results.

There has to be proof and you are entitled to see it. It could be a photo with a time or an automatic entry and exit record of your registration number.
If you are querying it then they have to provide the proof.
