when is the best time for a new starter to come onboard? we are having a grand reopening at work, is 5 days before launch to late?

No just about right I would have thought. Time you spend training, showing them the layout etc.
I think we need more information about the business , the role and the new starter, a swell as what you mean by 'come on board'
If it's a restaurant then far too late. If it's a car wash, no problem.

If it's a shop selling specialist products then too late. If it's a newsagents or Greggs, then fine.
