Wooden worktops going sticky!

The kitchen worktop is beech I think - a woodblock pattern. When we moved in the previous owners had coated it in Danish oil. Consequently it was sticky for months. We are now getting a new kitchen and I'm thinking of oak woodblock for the worktops but how do I prevent this going sticky after oiling it?
