frozen strawberries

I just realized that my refrigerator musta been turned too cold, or the strawberries were too far back in it, either way...I am now left with frozen strawberries. If I dethaw them will they turn into worthless mush and spoil quickly??? Anyway, to get to the point, is it better to keep them in the frig, or pop em in the freezer? Does anyone have any scrumpuous ideas to use frozen strawberries for...besides smoothies :)

If you're using them straight away, go for it and then blame the weather for their mushiness.

If not using them straight away, put them in the freezer or in the bin. They will definitely go mushier when frozen, which they are already, though.


If you freeze them then use them, you can go the usual route - use them as unusual and flavoured ice cubes, put them in with your ice-cream or make mixed-fruit crumbles out of them (all the berries should be mushy after cooking anyway).

I love experimenting with fruit/spice combinations for meals, but strawberries are one of the rare things that seem ..... well, I hope you can experiment and find something they are mixable with. Pinapples and chillies, or cheese, or aubergines, or honey, or......., yeah - strawberries, noh!

I freeze strawberries and raspberries from my garden I use them in trifle I pour jelly over them while still frozen I make up the jelly with a little less water This way they keep their shape and still taste good.
make em into a nice healthy smoothie
Buy one of those ready made sponge flan bases and while the strawberries are still frozen place them in the base and pour over Quick-Jel. You now have a quick, easy & delicious dessert. Serve with thick double cream. Mmmmmm.
Make them into your own icecream. Put them into the blender with a 250ml carton of single or whipping cream and a spoonful of sugar (optional) Blitz and stir alternatly until a soft whip icecream. Great in a cone or bowl. You can use the same method with Yogurt, Custard, or Soya desert. My Kids love making this with various frozen fruits, and it can be as healthy or naughty as you wish!!
Make strawberry fool - mash into whipping cream. Add a little kirsch if you want to play around with it as well and bump up the fruitiness. Serve all posh in frosted glasses with brandy snaps and a good dessert wine . . .

Variation - use mascarpone; use yoghurt and cream; add some lime juice; add cooked rhubarb and a touch of ginger.
