I'm just wondering what is the best thing to use to fill a gap between 2 pieces of kitchen worktop? Would it be best to use silicone or wood filler, or something else?

You can buy metal end finisher pieces that are shaped. We put a piece in the joint when we converted to double oven and separate hob and added a chunk of worktop. It looks fine and does a grand job
what's the size of the gap - and what's the heat exposure?
I would go for a metal strip that is T shaped in cross-section
If you do use a metal strip, take note that worktops have two thicknesses (28mm & 38mm) and different profiles in both thicknesses. By profile I mean the shape of the front edge which can be bullnose or quarter round for instance. You can get the strips to suit any combination but need to get it right or it is a dog's dinner or a finish.
