Cucumbers

First time of growing and have a lot coming - do I need to trim the leaves back to let the sun and fresh air get to them ?

I'd suggest you leave all the leaves on; the leaves are necessary to help grow strong fruit. Maybe pinch out the growing shoots (the top tips of each branch) after the branch has started to produce little cucumbers, so that the branch will then concentrate on swelling the baby cucumbers it already has.
I always think of the "3 D'S rule" remove any Dead, Deceased or Damaged material, then prune it relevant to the area its growing in.
