My plant has just finished flowering and there are 4 new shoots (about 6 - 8 inches high). When should I look to see these shoots flower?

are you sure they are shoots and not air roots?
Question Author
thay are most definitely not aerial roots as they have 4 to 6 leaves on each shoot, and this orchid does not have any aerial roots .

I don't know about the ice cubes allen, the end of the second paragraph on this link says keep away from freezing conditions, I expect you can't get more freezing than lobbing an ice cube on it ;)

my Orchids live on my north-East window sill and they thrive there. I water with tepid water once a week and they are behind the curtains at night so get reasonably cool night temperature. Whatever it is they like I seem to be doing ! (Unwittingly). My son buys them for me on the choice of colour and I will soon run completely out of space to cope with them! Therefor I have all different types and colours, but they are beautiful and while some 'sleep' the others are in flower so I am never without a flowering plant. The shoots are growing apace at the moment and I have put a clip on them to the sticks to get them to grow more upright.
