Lemon Syllabub

Syllabub is a simple classic creamy English dessert, made from wine, sugar and cream, however if you want to make a non alcoholic version you can use apple juice instead of wine. Lemon syllabub is a wonderful, fresh, creamy dessert, the combination of the tart lemon juice works well with the rich cream, sweet wine and sugar.

This is a beautiful dessert to serve in glasses layered with fruit. In summer fresh fruit is perfect, strawberries taste and look beautiful, but if you are making syllabub in winter, canned peaches are a great alternative or you could use lemon curd. A brandy snap case is another beautiful way to serve syllabub.  Lemon syllabub is a wonderful dinner party dessert, it looks stunning and you can serve it with whatever is in season or shortbread. The sharp, light lemon flavours are perfect after a rich decadent dinner but the sweet creamy dessert is still rich and luxurious.

Ingredients

  • ½ lemon, juice and zest
  • 125ml sweet white wine or apple juice
  • 50g caster sugar
  • 140ml double cream

Method

  1. Pour the wine or apple juice in to a bowl; add the sugar, half the lemon zest and the lemon juice, whisk until sugar has dissolved.
  2. Whip the cream and fold into the wine and sugar mixture.
  3. Spoon into 4 small glasses and decorate with the remaining zest.
