Chinese BBQ Pork, Char Siu

Char Siu


Char Siu is a Cantonese dish of roast pork; the pork is marinated in a sweet sticky sauce made with hoisin, soy sauce and honey.

The marinate is delicious and, if you don’t like pork, duck also taste fantastic cooked in this way. Char Siu is a very popular dish you have probably tried before without knowing, often fried rice from your local Chinese will have char siu in, it is the red pork, char siu baau are dim sum buns filled with char siu and noodles are often served with char siu.



If you order char siu from your local Chinese it will most likely be red. The red colour is created with food colouring, it is left out of this recipe but if you want the red colour feel free to add some in. Char siu pork served with a bowl of rice makes for a delicious dinner. Whether you are cooking for yourself or for the whole family this is a wonderful recipe. If you are only cooking for one you could divide the portions of marinated meat and freeze them instead of cooking all of it, so next time you want to add a little more flavour to your stir fry or noodles the char siu pork is already marinated.


This is a great recipe especially for BBQ. Char siu taste great roasted but on a BBQ it taste amazing and this is an idea recipe to serve to children, they will love the sweet sticky flavours.



Ingredients

  • 450g pork tenderloin, cut into 4 pieces
  • Water

For the char siu sauce

  • 3 tbsphoney
  • 1 tbsp sugar
  • 3 tbsp hoisin sauce
  • 4 tbsp soy sauce
  • 1 tbsp Chinese rose wine or sherry
  • 1 pinch white pepper
  • 1 tsp sesame oil
  • 3 clove garlic, finely chopped


Method

  1. Mix all the char siu sauce ingredients together.
  2. Marinate the pork pieces in the char siu sauce and refrigerate overnight.
  3. Heat the oven to 190C.
  4. Fill a roasting pan with a centimetre of water then place a rack on top, and place the char siu pork on the rack. Roast for 40 minutes, turning occasionally and basting with the char siu sauce.
