Mung beans . . .

I have a tin of mung beans in the cupboard which I want to use but I'm looking for some recipe suggestions.
I often cook with beans but was after a recipe specifically for mung beans (if there is such a thing!)

are they already cooked & in brine?

I do a recipe for mung beans that are in their dry state first. I wash & then soak them overnight.
wash again the next day, place in a pan with boiling water & salt, boil until it's all mushy - not too watery though.
In a different pan put some oil & heat, add some thinly sliced onions and cook until very soft.
Add some chopped tinned tomatoes and cook down until reduced by abot half.
Add some crused garlic, ginger, green chillies, tumeric & ground coriander, stir well & cook for a further 2 minutes.
Pour in the mung bean mixture and stir well again, bring to a simmering point, add fresh coriander & serve with asian cooked vegetables and chappatis.

Thanks jack. Yes they are cooked and in brine so i could use your recipe and then add the beans at the same time as you would add your cooked beans because they only need heated through.
Do let me know how it went & remember not to use the brine.

If you fancied the mung beans a little sweet & sour in taste: to the recipe I've already given you can add some tamarind paste and light brown sugar
