Hi, has anyone got a tried and tested recipe for mushroom sauce, preferably using beef stock, sherry etc instead of cream.

if you mean for steak or other meat dishes, try this:

1/2 pound sliced mushrooms (we like portabellas)
1 stick butter (real butter)
1 teaspoon fresh ground pepper
1 cup good quality Worcestershire Sauce

Melt butter in medium hot heavy skillet, reduce heat and add mushrooms. Add Worcestershire and reduce to simmer. Cook until sauce thickens slightly (about 15 to 20 minutes should do it)
Add pepper (more or less to your taste)
Some add thinly sliced onions but i don't... again pending your taste.
Serve over any meat, preferably grilled rib eye steak, medium rare!



Cheat! I do, buy a can of 'Cambells' thick mushroom soup heat & serve in a sauce-boat, Hey-presto..... compliments all round.
