Can anyone recommend any good cake recipes for a 1st birthday? I have looked online, but haven't quite found what I am looking for. Can anyone help?

The hedgehog cake was very popular amongst us Mums when my kids hit one ..many years ago ..easy to make and lets be fair how many one year olds really take notice of a birthday cake ......it's the Mums that eat it !!

A tip if you do try it Hawkwalk ..bake the two halves in pudding basins ..then you just sandwich them together top to top and slice a little off the bottom to get it to stand flat. That gives you the rounded shape ready for the frosting etc.
This recipe is really easy and can be made quickly. All you need to do is weigh 2 eggs in their shells, then use the same amount of self raising flour, soft butter and caster sugar. Mix well for 2 mins and then put in any cake tin you please. Remember to butter to cake tin well before you put the mixture in and then place in the oven for around 20 to 30 mins check between these times by sticking a knife in the middle and if it comes out clean its ready! This is the perfect amount for two small tins so you can make a victoria sponge with cream in the middle, or you could double the mixture and make four and pile them up with buttercream inbetween each layer. This is great for a children's birthday party as it looks really impressive and will go far. Also you can decorate it anyway you want!
